These pancakes were not meant to be green.
They are not made with spinach, or kale, or pulverized broccoli (ick!), or any other green thing that does not belong in breakfast foods. (Phew.)
Blue sprinkles + yellow sprinkles = green pancakes! 😀

Birthday cake pancakes!
You’re staring at a stack of pancakes that are delectably buttery, delightfully sweet, and very vanilla-y. They are also stuffed with a rainbow of sprinkles, making them perfect for breakfast on your special day.
And make sure to top them with copious amounts of whipped cream, caramel, and extra sprinkles.

Plus, unlike a lot of birthday cake pancake recipes out there, this doesn’t use a boxed mix! This isn’t because I’m against them or anything–trust me, boxed mixes are the way to go sometimes (have you ever tried the Ghiradelli brownie mixes? ❤ Heaven!)–it’s mainly because we didn’t have yellow cake mix…and I didn’t feel like going to the store.
These beautiful pancakes were borne out of laziness. 😉 Isn’t it great when that happens?
You do put the “cake mix” part of the recipe together separately, but it’s easy enough. I wouldn’t try actually baking a cake with it–it probably would not end well! :O
My dad came in just as I was setting up to photograph these and ate two right off the pile. In front of me. :O But my dad is not one for just-okay desserts, so I took it as a sign–if he likes ’em, there’s a 99% chance that you will, too! 🙂
Also, with this recipe, the most time consuming part is making the batter, so if you wanted to make the batter the night before, pop it in the fridge overnight, and fry ’em in the morning, these would take all of ten minutes tops to throw together. That means even if you have to be somewhere early in the morning–be it school, work, etc.–you’ll still be able to have these pancakes on your birthday!
